IPADS Food Science
Food science is a multi-disciplinary field involving chemistry, biochemistry, nutrition, microbiology and engineering to give one the scientific knowledge to solve real problems associated with the many facets of the food system. This lecture covers such scientific knowledge in food chemistry, food analysis, food biochemistry, food physics, food processing, and food engineering.

- Food and Water
- some selected topics in Food Chemistry
- some selected topics in Food Engineering such as refrigeration, heat and mass transfer, food freezing, drying of food, freeze-drying etc.
- some selected topics in Food Microbiology
- some selected topics in Nutrition
- some selected topics in Sensory Analysis
- ongoing research topics in my lab

履修上の注意
Food Science is an essentially interdisciplinary subject. Besides, the name of this course is the combination of 'IPADS (International Program in Agricultural Development)' and 'Food Science.' I would like to rethink contemporary meanings of Food Science in the context of Agricultural Development through giving a series of lectures, so your multidisciplinary academic interests are very welcome.
